Our flagship: a crisp, flaky shell wrapped around a fragrant filling of mashed potatoes, green peas, roasted cumin, coriander and a careful pinch of amchur. Folded the old-fashioned way, wide at the base, sealed in a sharp peak, then flash-fried to a deep gold.
